The proper methods of safely and humane dispatching rabbits are as follows :

home butcher for rabbits  , these are good safe methodes for quick dispatch  for dispatch in this order :  
CD then bleed out  .
CD then decapitation  
Decapitation  4 Clean  fast slit both jugular,  plus trachea . to be honest if you are only slitting a throat you open yourself up to getting cut pretty bad . Its safer if your doing it as part of a CD method either hopper popper or broomstick because the animal is more secure   .
a properly placed  pellet or bolt to the head is also acceptable as a fast way to render the animal incapacitated quickly followed by immediate bleed out. 

Inhumane methods and those being phased out of production by USDA  bludgeoning, ( bop and bleed) due it to high probability of inaccuracy and  , Freezing in a standard freezer  is inhumane for any size rabbit due to how slowly it effects them and the fact they remain conscious and feel there skin " burning" from the cold. , and freezer new borns is only acceptable when using a extreme cold gas that kills instantly.  , Co2 gas by itself is not recommended since the animal panics as it suffocated and will thrash and  panic.,   N2 used first  to "drug" and calm the animal  then followed by Co2  to suffocate is marginally  more humane ,but still not the fastest or best method. 

I have also assisted butcher kosher and halal. If done correctly its fine, but you have to have an extremely sharp knife , and be extremely fast . Done properly they lose consciousness in 3-10 seconds . About the same as CV . I still prefer .22 to the head , then bleed out for small live stock.
